Flavor Principles

  • Spices- Cumin, saffron, Spanish paprika, chili pepper, garlic, cayenne, cinnamon, cloves, nutmeg, vanilla
  • Herbs- Oregano, fennel, basil, mint, bay leaves, parsley, rosemary, thyme, sage, tarragon, salt, and pepper
  • Sauces-alioli, mayonesa, marinera, picada, romesco, sofrito, verde, vinagreta, mojos
